 This smooth velvety chocolate mousse is completely GUILT-FREE!  Its loaded with antioxidants and energy boosting raw and nutritious ingredients.  Just when were running out of energy and ideas at the end of the school holls.

This absolutely deeply delicious chocolate mousse is made from ripe avocado that is blended with raw cacao powder, flavoured with real vanilla and spice.  The optional addition of a banana or a little coconut water will make the texture a little lighter.

There is something magical about avocado; it’s a wonderful emulsifier combining with other ingredients perfectly, it retains its creamy luxury texture and delivers the chocolate and vanilla flavours  beautifully…  

 

What’s good about it:

The botanical name for the cacao tree is theobroma cacao greek for “food of the gods.  Chocolate and cocoa in the form of cacao powder can improve heart health, lower blood pressure and reduce LDL (“bad”) cholesterol.  Cacao is high in magnesium and iron and also contains compounds that act as stimulants believed to boost serotonin and endorphin levels in the brain that gives you a pleasurable sensation similar to the high people get after exercise. Avocado adds a lovely creaminess and is full of good anti-inflammatory mono-unsaturated fats that is good for your health.

2 tablespoons of raw organic honey (or your sweetener choice of the following: 4 soaked pitted dates, organic maple syrup, stevia)
3 mashed bananas
3 large ripe avocados
1 teaspoon vanilla pods seeds from 1 fresh vanilla bean
1/3  cup raw cacao chocolate powder or dark chocolate powder of your choice
2-4 Coconut water to reach the required texture, or not for creamier finish is preferred
Pinch of sea salt and cinnamon to enhance flavour

TIP: If you are choosing to spread this fab mousse onto cakes or cupcakes as a decadent and different topping, then it’s a good idea to add 2 tablespoons of cold pressed coconut oil or cocoa butter to help firm it up and seal it with a high sheen.  


5 Easy Steps:

Combine all the ingredients in a good powerful high speed blender  a Vitamix if you’re lucky but others will blend this well, including my trusty handheld blender) adding avocadoes first, then honey, bananas, vanilla and cocoa, then coconut water if your are using.
Blend for about  30 seconds, then repeat until smooth and creamy.
Add a further splash of coconut water to make a lighter mousse if preferred.
Spoon into bowls or glasses and allow to set in the fridge.

  • Serve in individual glasses or jars topped with cacao nibs, chopped macadamia nuts and seasonal berries
  • With frozen smashed raspberries
  • Spread over a fresh made chocolate fridge cake
