Golden Leek and Cheddar Omelette

A tasty and filling breakfast, lunch or dinner that's made in minutes.
Omelettes are super easy to make, they can be plain or made with numerous combinations of vegetables, meats or cheeses to change up the flavours.
Eggs fit well into most diets, they are just about the perfect low carb and keto diet ingredient. The nutrient profile for eggs is approximately 60% Fat, 35% Protein, and 5% Carbs.

Ingredients

Golden Leek and Cheddar Omelette

  • 2 large free-range organic eggs
  • 1 knob tallow or unsalted butter
  • 1 tsp turmeric grated root or ground
  • 60 g cheddar cheese sliced or grated optional
  • 1/2 small leek
  • pinch sea salt
  • pinch black pepper
  • sprinkle chopped chives optional
  • drizzle olive oil optional

Instructions

  • Slice leek finely.
    Heat a small knob of tallow in a small frying pan on a low heat, ideally ceramic or cast iron.  Once melted and bubbling add the leek and simmer until golden.
    Crack the eggs into a mixing bowl, add turmeric and a pinch of sea salt and black pepper. Beat well with a fork until turmeric mixed in.
    Add a little more tallow and once melted pour your beaten egg mix into the pan, move the mixture around the pan to spread evenly.
    Once the egg mix has began to set, but is still soft on top, place slices of cheese (if using) evenly on your omelette.  
    Once the omelette has set and the bottom is golden use your spatula to slide the omelette on to a plate.
    You may like to add an additional drizzle of olive oil, pinch of sea salt and black pepper and sprinkle of chives to taste.  Enjoy!

Notes
