Sugar Free Almond Apple Crumble
You can't go wrong with a simple old fashioned apple crumble and this is a healthier version of the good old classic.
There are many different variations on the old favourite recipe, yet our twist is the best yet. This is a sugar free version, so packs a deeper, tarter taste. Also, by replacing the white refined high carbohydrate flour with ground almond nuts we are increasing the fibre content and reducing the blood sugar hit. Good news for those watching their weight and families looking to reduce their children's sugar load.
- 400 g cooking apples
- 2 tbs ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
Almond crumb mix
- 80 g almond flour or ground almonds
- 20 g ground oats
- 1/2 tsp vanilla bean paste (unsweetened) optional
- 40 g unsalted butter cold
- 1-2 tsp honey to sweeten apples and crumble as needed
Preheat the oven to 190°C/375°F/gas 5.
Prepare apples by peeling and coring, then cutting into slices.Place the sliced apples into a pan with water and spices. Add honey if using.
Simmer over a low heat for 5 minutes, stirring occasionally, until slightly softened. Tip apples into a small baking dish.
Add the almond flour and oats into a large bowl and mix well. Chop the cold butter into small cubes and add to the oats and flour mix. Rub the butter into the flour and oat mix with your finger tips repeatedly until a small crumb consistency is achieved. Add in honey if using and mix thoroughly, then cover the apple evenly with the crumble mixture.Bake for around 20-25 minutes, or until golden and cooked through. Including cinnamon and other spices as well as vanilla paste adds flavour and sweetness naturally to your recipe. You may opt to omit or reduce the amount of honey you use in your recipe to opt for a lower carb or sugar free apple crumble.
